Sake has been brewed in Japan for thousands of years. The most expensive kind, made with polished grains of rice, is called junmai daiginjo. One bottle can easily cost over $100. And the more the rice is polished, the more expensive the sake. Niizawa Brewery, in Japan's Miyagi Prefecture, brews sake with rice polished to less than 1% of its original size. The most expensive bottles of this sake cost almost $10,000. We followed a master sake brewer to find out how sake is made and why some bottles can be so expensive. Royal jelly is a secretion made by honeybee workers to feed larvae of future queen bees. All bees consume royal jelly, but once a queen is selected, workers then feed on pollen and honey, while only the queen feeds on the prized jelly. Referred to as the "superfood of the beehive," royal jelly contains much more nutrients than honey and is 20 times more expensive. Since the 1980s, production worldwide has grown from 700 to nearly 4,000 metric tons. Royal jelly can be found in its natural form, as a health supplement, or in skincare products, and it can reach $125 per pound. But extracting royal jelly requires great precision, as the process can only be done by hand. 00:00 Intro 00:57 Meet Zuozheng 2:43 Extracting royal jelly 7:24 Differences with honey 8:58 The ideal bee 9:59 Concerns over the fragility of bees MORE SO EXPENSIVE FOOD VIDEOS: Why Bilona Ghee (A2 Desi Ghee) Is So Expensive | So Expensive Food | Insider Business 🤍 Why Kampot White Pepper Is So Expensive | So Expensive Food | Insider Business 🤍 Why Korean Rice Syrup (Ssal-Jocheong) Is So Expensive | So Expensive Food | Insider Business 🤍 #RoyalJelly #SoExpensiveFood #InsiderBusiness Business Insider tells you all you need to know about business, finance, tech, retail, and more. Whereas factory-made ghee sells in India for around 585 rupees per kilogram, bilona ghee can cost up to 1,900 rupees per kilogram — over three times as much. Compared to industrial ghee, it takes much longer to make, but the end product is nuttier and more aromatic. Outside of India, it can sell for over $100 per kilogram. Kampot pepper, grown in Cambodia, is so expensive because it’s considered the Champagne of pepper. In 2016, the European Union awarded pepper grown in this region a protected geographical indication. The taste of Kampot peppercorns is described as fresh, citrusy, fruity, and pungent. But these peppercorns don’t come cheap. Wholesale Kampot black pepper costs $15 per kilogram and white pepper costs $28 per kilogram. Online, it can cost over $100 per kilogram. Over 400 farmers grow this pepper, but climate change and competition from large farms could make it harder to earn a profit. Jimmy Tsui is a former member of Tung On in New York City's Chinatown and of the Sun Yee On triad in Hong Kong. In 1985 in New York, he was arrested and charged with robbery and homicide, with a $1.5 million-dollar bail. The case was later dismissed. This led to his transition into Sun Yee On, where he became a "426 general" in 1988. He traveled back and forth between Hong Kong and New York City and was involved in karaoke bars, gambling houses, and various scams. In 1992, he was shot five times while sitting in his car. This ended his involvement in mob life. Around this time, the influence of the Chinese mafia in New York was declining, and Tsui's network dissolved. Tsui speaks with Insider about how the triads make money, such as extortion and protection rackets. He discusses the initiation ceremonies and rules of membership as well as the ties to the movie business. He also covers the triads' global expansion. After leaving the triads, Tsui got involved with Chinatown Gang Stories, a YouTube channel organized by Mike Moy, a former gang member, and New York City Police Department officer. With a whopping $500 million food budget, catering chefs for Singapore Airlines pump out 19 million in-flight meals a year. But cooking food for 30,000 feet is anything but easy. Airplane meals, like us, can't miss their flights. So chefs move with military clockwork to stay within flight schedules and food safety requirements. Then there's the added issue that food can taste differently in the sky because of pressure, engine noise, and dryness on the plane. It's a phenomenon airlines and manufacturers have been working for decades to fix. Food and beverage director Antony McNeil develops meals that can regenerate well in small aircraft ovens while still tasting good. We visit the carrier's largest catering facility inside Changi Airport to see how all this food makes it onto planes before takeoff. 0:00 Intro 1:18 Where Singapore Airlines makes in-flight meals 2:34 How in-flight meals are cooked 6:46 Why food tastes different on planes 8:58: How airline food gets to the plane MORE BIG BUSINESS VIDEOS: Why Car Companies Still Use Clay Models That Cost Up To $650K | Big Business | Insider Business 🤍 Why Tiny Cactus Bugs In Red Food Dye Are A $35 Billion Industry | Big Business | Insider Business 🤍 A New Mining Ship Sucks Metals Off The Seafloor. But although farmers in Miyazaki dedicate an entire year ( or their entire lives?) to preparing these mangoes for auction, there is no guarantee that the fruit will fetch such a high price. So why are Taiyo no Tamago mangoes so difficult to grow? And what makes them so expensive? The Moulin Rouge in Paris opened in 1889 in Paris’ Montmarte district as a place where people from all walks of life could come to mingle and enjoy music, dance, and comedy. It is credited for making the cancan dance famous, which is still performed over 130 years later. In the 20th century, the venue survived a fire, two world wars, and its share of criticism for the cancan dance. Despite it all, the Parisian theater remained an important cultural hub and has inspired Hollywood films and Broadway musicals. Their current show Féerie cost 8 million euros to create, and half of that went only to the costumes. The dancers wear 1,000 outfits adorned with feathers, rhinestones, and sequins. Féerie runs 365 days a year with 2 shows every night. Purple flowers in Kashmir produce the world's most expensive spice — saffron. While it can sell for $10,000 per kilogram, climate change is making it even more expensive. Because of lower-than-usual rainfall over the last few years, production has dropped significantly. And fields that once yielded this delicate spice have become sites for new housing construction. Climate change is threatening the production of all kinds of foods from cloves in India to eels in Japan and Spain. Here are 10 expensive, and vulnerable, foods and why climate change is making them so much more expensive. Single-origin specialty coffee can cost over $30 per pound, more than five times the average price of 1 pound of ground coffee in the US. “Specialty” is the term for the highest-quality coffee, and aficionados describe its taste with words more frequently used by sommeliers, like “floral” or “fruity.” Reaching this level of quality requires investment and labor at every step of production. But despite the prices a roasted bag of single-origin coffee can reach in the world’s wealthiest countries, the farmers who handpick each coffee cherry struggle to earn a profit. Patan patola saris range from $1,500 to $8,500. Instead of designs being embroidered onto the textile, Patan patola requires them to be dyed onto the silk threads themselves. Both horizontal and vertical threads are dyed, then cross-woven to reveal the design. The most complex designs can take one and a half years of manual work to complete. Traditional Japanese calligraphy ink, referred to as sumi ink, comes in a solid form. It takes at least four years of production before these ink sticks can be sold, and even longer for the most expensive ones. A 200-gram high-grade ink stick from a producer like Kobaien costs over $1,000. And at some other retailers, prices can reach almost $2,000. Meanwhile, almost double the amount of commercial India ink can go for as little as $9. Editor's Note: The original version of this video incorrectly named the featured calligrapher as Shijo Azakami. His correct name is Sho Azakami. The original video incorrectly stated that monkey glue was used to make ink sticks, the correct type is donkey glue. Often referred to as "the Wagyu of salmon," Copper River king salmon can reach $120 per pound. Sought after by chefs for its rich, buttery flavor, this salmon is not easy to come by. To reach its final destination in Alaska's Copper River, it has to swim 300 miles between glaciers. It's a tiring journey in which the fish builds up its strength and muscle. The cold waters of the Copper River are challenging for fishers too, who set sail with no guarantee they will catch any fish at all. So is Copper River king salmon worth the challenge? And why is it so expensive? Editor’s Note: In a previous version of the video, the chart at 11:02 was incorrect featuring the years in the incorrect order. Insider regrets the error.
